چکیده

Abstract Today, a few hundred mycotoxins have been identified and the number is rising. Mycotoxin detoxification of food feed has technically uphill task for industry. In twenty-first century, public demand healthy with minimum use chemicals preservatives. Among all fungal inhibition mycotoxin methods so far developed food, biopreservation biodetoxification found safe reliable. Nowadays, lactic acid bacteria (LAB) are great interest as biological additives in owing to their Generally Recognized Safe (GRAS) classification capability. The occurrence fungul growth chain can lead health problems such mycotoxicosis cancer humans due producing aflatoxins. Biopreservation among safest most reliable fungi food. This review highlights potential LAB biodetoxificant by summarizing various reported activities against released into foods. Mechanisms detoxification, also inherent environmental factors affecting detoxifying properties covered.

Sourdough lactic acid bacteria as antifungal and mycotoxin-controlling agents

Sourdough starter cultures are rich sources of endogenous lactic acid bacteria. The extended shelf lives of sourdough breads are attributed to a large array of organic acids and low-molecular-weight metabolites produced during the fermentation process. Different species belonging to the lactic acid bacteria group of microorganisms, mainly Lactobacillus and Leuconostoc, are increasingly gaining ...

Aflatoxin detoxification potential of lactic acid bacteria isolated from Iranian poultry

This study was carried out to examine aflatoxin B1 (AFB1) removal ability of four strains of lactic acidbacteria (LAB). Three indigenous (Lactobacillus rhamnosus TMU094, Lactobacillus fermentum TMU121and Pedioccus pentosaceus TMU457) and a non-indigenous (Labacillus rhamnosus PTCC1637) isolateswere studied. The strains were incubated with (AFB1) at different time. The toxin residual in the supe...

Inhibition of mycotoxin-producing Aspergillus nomius vsc 23 by lactic acid bacteria and Saccharomyces cerevisiae

The effect of different fermenting microorganisms on growth of a mycotoxin- producing Aspergillus nomius was assayed. Two lactic acid bacteria, Lactobacillus fermentum and Lactobacillus rhamnosus, and Saccharomyces cerevisiae, all of which are widely used in fermentation and preservation of food, were assayed on their fungus inhibitory properties. Assays were carried out by simultaneous inocula...
